The holidays can be a challenging time for those of us living a gluten-free and low-carbohydrate lifestyle. Tempting treats and sweets are everywhere and they are so delicious! Often our friends and family don’t really understand our diet and lifestyle and family gatherings can become an intimidating sea of sugar and wheat. Join Chef Ella Elman, owner of The Secret Ingredient, to learn the fundamentals of gluten-free baking and cooking. She will offer some simple recipes for holiday treats and sweets that you can share with your friends and family. We will cover the following information:
- What is gluten and how does it work?
- What are some gluten-free alternatives?
- How does gluten-free cooking and baking differ from the traditional variety?
- Some gluten-free flour mixes
- How paleo grain-free baking works
- Recipes for holiday treats such as pie crusts, pumpkin pie, cookies, brownies, muffins and scones
- Holiday and paleo recipes for stuffing, gravy, sides and salads
Ella will have a recipe handout for you to take home.
More about Ella:
Ella Elman is the head chef and owner of The Secret Ingredient, a small business offering personal chef services to people with food sensitivities, allergies and those on special diets such as paleo, candida, GAPS, low FODMAP, etc. A scientist by training, Ella holds a Master’s degree in Forest Ecology and worked as a forest ecologist in the Seattle area for 12 years. In 2011, she left her job to take a sabbatical and to focus on healing herself from chronic Candida and other problems. After several months on the Candida diet, she found a new appreciation for the difficulty of sticking to a restrictive diet and still being able to eat delicious and varied meals.
Soon, friends with food sensitivities started asking for help with recipes. Ella realized that there were a lot of people out there on restricted diets. However, they lacked the time, experience and resources to completely change their diet to accommodate these new requirements. She decided to turn her life-long passion for cooking into a small business helping people with food sensitivities. Soon after, she started working with a clinic specializing in helping people with food-related illness and The Secret Ingredient was born! As she started working with clients on a long-term basis, she was happy to see them improving over time as they were supported in their diets and able to heal.
Today, The Secret Ingredient works with a number of naturopathic and functional clinics along with nutritionists and fitness and wellness centers. We offer personal chef services in the Seattle and Eastside area as well as a meals delivery service on the Eastside.
